Chocolaty chocolate cake

Every family love chocolate cake. Well, mine does.  Bake one and in a no time, it's gone. I have tried many recipes. The expensive ingredients ones, the cheap ingredients ones, with butter, with oil. The ones you beat first, the ones you just mix everything in. Still have not found the perfect recipe. But  I have tasted a perfect moist choc cake made by a relative. It cost 80rm for one small cake.

Yesterday I found  and tried one recipe from the net which is easy, inexpensive and delicious too.  In a jiffy you can give your family a yummy, scrumptious chocolaty cake. Topped with Mimi's choc topping.

A-mix all
2 cups self raising flour (or plain flour with 2tsp baking powder)
2 cups caster sugar ( I put 1 1/2 cup white sugar and 1/2 cup brown sugar)
3/4 cup cocoa
1 tsp salt
1 1/2 tsp baking soda

B-mix all except hot water
2 big eggs or 3 small eggs (beat )                                                                       
1/2 cup oil                                                                                                         
3/4 cup milk ( fresh , I make milk from powder milk, or diluted evaporated milk)
1 tbsp vanilla essense                                                                                         
I cup very hot water.

Mix together dry ingredients (sift the necessary). Make a well. Pour in all the liquid ingredients (except the hot water) into the well and stir slowly to avoid lumps. When all is mixed well, lastly pour the very hot water,  quick stir until well mixed. Immediately  pour into greased tin (prepared beforehand) or lined with paper and pop into the hot oven.

Mimi's topping

1/2 cup cocoa
1 cup fresh milk
3-4 tbsp condensed milk
1 tbsp marjerin

Stir cocoa with some milk to clear the lumps. Mix everything together and double boil ( put the pot in the kuali filled with water) and stir  until it is thick enough to spread on the cake. (cool cake first)
